Banana Cake for Brittney


125g butter, softened
3/4 cup firmly packed brown sugar
2 eggs
1 1/2 cups self raising flour
1/2 teaspoon bicarbonate soda
1 teaspoon mixed spice 
1 cup mashed banana (the browner the better)
1/2 cup sour cream
1/4 cup milk
2 tablespoons chia seeds 


Oven to 180deg.

Beat butter and sugar together until creamy. Add eggs, one at a time, beating well between each addition.  Add spices, bicarbonate soda (make sure no lumps in bicarbonate soda), bananas and chia seeds, mix well to smooth. Gradually add four, cream and milk, blend until smooth.

Pour into a lined baking tray.

Bake about 50 mins depending on tray.

Ice with cream cheese frosting.
